Baked Eggs with Tomatoes and Feta

These deliciously creamy Oven Baked Eggs with Tomatoes and Feta are packed with protein and tangy cheese. Perfect for breakfast or dinner!

You probably know by now that I’m a little obsessed with baked eggs, like my Italian Baked Eggs Recipe and my original Creamy Baked Eggs.  They’re just so easy to make, no babysitting on the stove top like fried or scrambled.

Let me introduce you to my newest obsession: feta cheese.  I honestly didn’t know how much I loved feta until I made this Roasted Red Pepper Parmesan Fettuccine pasta.  And this Bacon Feta Penne Pasta.  And then these Feta Roasted New Potatoes.  I’ve been going a little feta crazy in the kitchen.

Feta packs a zesty, savory, slightly tangy flavor that allows you to use less cheese (less calories!) in recipes.  Oven baked eggs are already a great low-carb breakfast idea and I love that you can so easily customize the flavors (and calories) to your preferences.

Ingredients in Oven Baked Eggs

These baked egg cups come together with few ingredients. Here’s what you’ll need to make these baked tomato and feta eggs: 

  • Beefsteak tomato
  • Feta cheese
  • Eggs
  • Dried oregano 
  • Salt and pepper 

How to Bake Eggs

  1. Spray two oven-safe ramekins with non-stick spray.
  2. Add chopped tomatoes and crumbled feta to ramekins.
  3. Sprinkle with dried oregano.
  4. Crack 2 eggs to each ramekin.
  5. Sprinkle generously with salt and freshly ground pepper.
  6. Cook until egg whites are set.

How Long to Bake Eggs? 

These feta eggs need to bake at 375F for roughly 15 minutes. You’ll know they’re done when the egg whites are set. Be careful not to overcook the eggs or else the yolks will be hard! 

Tips for Making Baked Egg Cups 

  • I like to put my ramekins on a baking tray so they’re easier to pull out of the oven. 
  • Be very careful when enjoying your oven baked eggs! The ramekins will be quite hot. 
  • You can easily adjust this recipe to suit your preferences. Use different kinds of cheese, add sauteed veggies, you name it! 
  • We love to serve these baked eggs with Air Fryer Bacon and fruit salad for an easy breakfast.

  1. This sounds like a great recipe…will try it tomorrow morning. I like the idea of baked eggs but this is the first recipe I’ve seen that doesn’t require milk, something I rarely have in the house.
