I try to meal plan every Sunday afternoon before going to the store for my weekly grocery trip.  Inevitably, each week I can guarantee two things will be on the menu: some form of pasta, and something Tex-Mex.  (And these pancakes of course!)  We pick up fresh, homemade tortillas once a week from a local restaurant and they can’t be beat!  Not to mention it makes enchiladas even easier because there’s no need to take the extra step to soften them.

Ingredients

  • 15 oz corn drained
  • 15 oz BUSH'S Beans Frijoles Cubanos drained
  • 1 orange bell pepper diced and deveined
  • 2-3 tbsp diced green onions
  • 2-3 tbsp chopped cilantro
  • ½ avocado diced
  • Juice from ½ lime

Instructions

  • Mix all ingredients together.
  • Serve immediately.

Notes

You can also mix all of the ingredients together, except for the avocado, and allow the salad to chill in the refrigerator. The flavors will meld together. Add the avocado just before serving.

    That Corn and Bean Salad looks wonderful! As a Tex Mex lover, I love and use lots of black bean recipes! Chilis. tacos. and nachos (refried black beans) are favorites. I would love to try the black Bean Burgers, too.

  2. I would take a warm bowl of these with some corn and peppers with a hunk of garlic bread! Yum!

  3. I keep my meals simple. Rinse and coarsely mash 2 or 3 kinds of beans and heat, pile on chopped veggies (cauliflower, broccoli, cabbage), and add in a big dollop of hummus. Great with a warm baguette or whole wheat pita. Keeping it vegan.
