3 Ingredient Pancakes made with bananas and eggs. Pancakes from scratch couldn’t be easier or come together faster!

We have homemade pancakes at least once a week, but rarely for breakfast! Chocolate chip pancakes (and sometimes waffles) are my go-to easy dinner when my husband is at the fire station.

Lately I’ve been making these three ingredient pancakes for my husband and I on busy mornings because they’re so easy and also macro-friendly.

3 Ingredient Pancakes

I’ve played around with the ingredients and ratios on this recipe and found this one to be the one I use the most. My youngest is gluten-free, so sometimes I will omit the flour for him but I find those two ingredient pancakes to be a little more… slimy.

These pancakes are made with:

  • Bananas
  • Eggs
  • Self-rising flour

How to Make 3 Ingredient Banana Pancakes

This recipe is super simple and almost impossible to mess up: add all of the ingredients together and mix well! I like to mash the bananas first to help things incorporate easier.

  1. Mash bananas.
  2. Whisk in eggs.
  3. Stir in flour.
  4. Let the batter rest for five minutes.
  5. Scoop onto hot griddle and cook evenly.

What is self-rising flour?

Self-rising flour is flour that already contains a leavening agent like baking powder. While it contains all-purpose flour, it is not an equal substitute. It is important to use the specific flour (cake flour, bread flour, etc) a recipe calls for as they all serve a different purpose.

You can make your own self-rising flour by combining 1 cup all-purpose flour with 1 teaspoon baking powder and ¼ teaspoon salt.

3 Ingredient Banana Pancakes

I love this recipe because it is naturally dairy free and easy to make gluten-free (either omit the flour completely or use a gluten-free substitute + baking powder).

These pancakes will be dense because of the eggs and lightly sweetened from the bananas; the more overripe your bananas are, the sweeter your pancakes will be. If you want sky high fluffy and light pancakes, these Homemade Pancakes are the ones for you.

Sometimes I like to add in a sprinkle of cinnamon to the batter and top with sliced bananas, blueberry syrup, or strawberry butter.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 1 cup self-rising flour see notes

Instructions

  • Mash bananas in a medium bowl.
  • Add eggs and mix well.
  • Add self-rising flour and stir to combine.
  • Let batter rest a few minutes while the griddle heats up.
  • Scoop the batter onto a hot griddle (I use an electric griddle set at 325 degrees) and cook each side evenly.

Notes

To make your own self-rising flour add 1 cup all-purpose flour with 1 tsp baking powder and 1/4 tsp salt.
I like to make bigger pancakes, so I typically get six from this recipe which is perfect for my husband and I.  If you want more pancakes, make them smaller.  These are dense and won’t spread much.
