One of my first jobs as a teenager was working at a retail store in the mall.  It was dangerously close to a cookie store selling freshly baked cookies, and I loved to get one of their giant rainbow cookies on my break.  A warm vanilla sugar cookie rolled in sprinkles – SO GOOD.

I decided to recreate a version of those cookies using my favorite Vanilla Pudding Cookies recipe.

What’s Needed for Confetti Cookies? 

These rainbow sprinkle cookies couldn’t be easier to make! Here’s what you’ll need for this recipe: 

  • All-purpose flour
  • Salt
  • Baking powder
  • Unsalted butter
  • Granulated sugar
  • Vanilla extract
  • Eggs
  • Instant vanilla pudding 
  • Rainbow sprinkles

How to Make Confetti Cookies 

  1. Beat together the butter and sugar until fluffy. Gently beat in eggs.
  2. Mix flour, salt, baking powder, and vanilla pudding mix in a separate bowl.
  3. Gradually add the dry ingredients into the wet. Stir in vanilla.
  4. Form into balls, then roll in sprinkles. 
  5. Bake at 350F for 9-10 minutes.

Can I Use Another Type of Pudding Mix? 

No, you must use instant pudding mix. Homemade Vanilla Pudding and cook and serve pudding mix won’t work. 

Can I Use Another Flavor of Pudding? 

Yes! I typically make this confetti cookie recipe with vanilla pudding, but I’ve had readers leave reviews after they used different flavors of instant pudding. Red velvet, butterscotch, chocolate, lemon — anything seems to work well here!

Tips for Making Confetti Sugar Cookies 

  • Note that the pudding mix is added to the cookie dough like a dry ingredient. Do NOT make the pudding as it instructs on the box. 
  • It should go without saying, but make sure you like the taste of whatever brand/kind of sprinkles you use, because the flavor will obviously be very present in the cookie.  
  • The sprinkles I used are soft, with an almost “waxy” texture, and no crunch; the opposite of what you would get if you used more traditional nonpareils.

  • 1/2 tsp baking powder
  • 3/4 cup unsalted butter
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 small package instant vanilla pudding
  • Rainbow sprinkles

Instructions

    1. Beat butter and sugar until fluffy; gently beat in eggs.
    2. Mix flour, salt, baking powder, and vanilla pudding mix in a separate bowl.
    3. Gradually add the dry ingredients into the wet.
    4. Stir in vanilla.
    5. Roll cookie dough into balls, then roll in rainbow sprinkles.
    6. Place the cookie dough balls onto a parchmen paper-lined baking tray.
    7. Bake at 350 degrees F for 9-10 minutes.

  1. Quick question. For the very vanilla pudding cookies did you use instant pudding or regular pudding. The recipe on line does not indicate which one. I am guessing instant but just wanted to be sure.

    1. H Diana, I like to let my cookies continue baking on the pan before removing them to cool. If this doesn’t solve your issue, you might purchase an oven thermometer to make sure your temp is accurate.

  2. I just finished making the dough and it is very sticky. Have you had this happen? I am going to put it in the frig for awhile so I will be able to roll it into balls. Any other ideas? Thanks.

    1. Hey Julie… hmm, I’ve never had that happen. Might need a touch more flour? I use a spoon to scoop the flour into the measuring cup and then level off. You want it a little sticky so the sprinkles stick. Hope this helps!

Can you please help me find a substitute for this pudding mix. I already had my candy sprinkles and some of the ingredients but my problem is this pudding mix.
