I’ve tried a few different recipes for Sheet Pan Lemon Chicken but they always seem to come up short. I don’t like roasting lemons on the sheet pan with the chicken and broccoli because I find they turn too bitter from the pith. Other recipes require marinating beforehand (which I always forget to do) and don’t seem to hold enough of the lemon flavor.

I like to serve this dish over rice with an extra lemon slice or two in case the broccoli needs a little more zip. Sheet Pan Lemon Chicken
- 6 Cooked Perfect Lemon Herb Fire Grilled Chicken Tenders
- 5 cups broccoli florets, bite-size
- 2 tbsp olive oil
- 1 clove garlic, minced
- 2 tbsp finely grated Parmesan (the powdered kind)
- Preheat oven to 375 degrees.
- Spray a rimmed baking sheet with nonstick spray.
- Place broccoli on baking sheet, toss with olive oil, garlic, and Parmesan. Season with salt and pepper.
- Arrange the broccoli in a single layer, leaving 1/3 of the sheet pan for the chicken. Arrange the chicken in a single layer.
- Bake for 16-18 minutes, until chicken is heated through and reaches 165 degrees. Stir the broccoli and/or rotate the pan if you see it is getting too dark.
