Sweetheart Sandwich Cookies

Remember when I made these Vanilla Cookies a few weeks ago, and I told you they were the best cookies I’ve ever had. Well, not anymore. If you take two of those vanilla cookies and sandwich them around buttercream and roll them in sprinkles… turns out they are the best cookies ever. Like, ever, ever. Did I mention they’re pink? Seriously, could they be any cuter?

These cookies almost make me wish I drank coffee because they are just that rich. My awesome husband came home from the grocery store last night with my fav Girl Scout cookies and I couldn’t even eat them because I had already overdosed on these babies.

These would be such a cute Valentine’s Day treat for your spouse, your kid’s teacher, your mailman… anyone you want to show your love for with sugar. I planned on sending these with my hubby to his fire station like I do most of my baked goods, but they might not last until his next shift. Sorry guys.

Ingredients
- 1 1/2 cup flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup butter
- 1 cup sugar
- 2 tsp vanilla
- 2 eggs
- 1 small pkg instant vanilla pudding
- Pink food coloring
Instructions
- Beat butter and sugar until fluffy; gently beat in eggs. Stir in vanilla. Mix flour, salt, baking powder, and vanilla pudding mix in a separate bowl. Gradually add the dry ingredients into the wet. Mix in food coloring until desired color. Bake at 350 degrees for 9-10 minutes.

- 3 cups powdered sugar
- 2-4 tbsp milk
- 1 tsp vanilla
Instructions
- Mix all ingredients; add milk as needed to reach desired consistency. Spread onto cookie and top with another cookie. Coat edges with sprinkles.

Was thinking about altering colors for xmas & I was wondering what you do with the dough when baking do you roll into balls or just drop by the spoonful?
Hi Kimberly- I use a cookie scoop (like a miniature ice cream scoop) to drop my cookies. Rolling into a ball would probably also work, but the dough is kind of sticky.
