A few weeks ago Sophia and I were invited to a party, in partnership with Disney Junior, celebrating two of our favorite Disney princesses – Elena of Avalor and Sofia the First. If you know my Sophia, you know that she loves a good theme party.
Disney Junior has become a fun part of our morning this summer. Each morning after we eat breakfast and finish cleaning up, we all head in to our TV room just in time to watch a few of our favorite episodes together. (We especially look forward to the end of the week to watch Disney Junior’s all new episodes every FRiYAY morning on Disney Channel.) It’s been so nice to be on a relaxed routine while the kids have been out of school.
I remember when Sofia the First debuted, just a few months after having my own Sophia. We have been fans from the beginning! The same goes for Elena of Avalor. As a mom of two daughters, I especially love the sister-bond and strong female themes that Elena of Avalor promotes. My girls love the adventure.
How adorable were these little princesses all coloring together? So sweet! The decorations at the party were all so cute and the games and food all tied in perfectly as well. We feasted on mini tacos, “Abuela Luisa’s empanadas”, and even a mini churro bar.
We had frozen hot chocolate (which Sophia loved!) and a yummy watermelon agua fresca. I knew I wanted to make a batch of this when I got home- such a great way to get your family to drink more water, especially in the heat of the summer! Sadly, none of my kiddos really enjoy watermelon, but they do all love berries. I decided to make my own Raspberry Lime Agua Fresca version and they all loved it!
Agua Fresca (Spanish for “fresh water”) is a refreshing (non-alcoholic) drink and perfect way to get in those recommended glasses of water each day. Similar to a smoothie with pureed fruit, however Agua Fresca recipes use more water.
Agua Frescas are popular in Mexico and Central America and come in a variety of different combinations of fruits, cereals, flowers, or seeds. The best part of making them at home is that you can customize the flavor combinations for your taste.
This Raspberry Lime Agua Fresca is our favorite but it would also be delicious with whatever fresh or frozen fruit you have on hand, like mangos or pineapples. If you are using a fruit that has seeds, like raspberries, make sure to pour the puree through a strainer before serving.

- 6 oz frozen raspberries
- 1 1/2 cup cranberry juice
- 1/4 cup sugar
- 6 12oz cans lime flavored sparkling water chilled
- Lime wedges to garnish
Combine raspberries, cranberry juice, and sugar in a blender.
Blend until smooth.
Pour mixture through a sieve to remove any seeds.
Add 1/4 cup of blended fruit puree to a glass.
Fill glass with 1 can of lime sparkling water.
Garnish with lime wedges or slices as desired.
I used sparkling water flavored with lime to add a crisp, clean flavor to the drink. You could use regular sparkling water and squeeze in the juice of 1/2 a lime into each 12 oz serving.
