Caramel Pecan Brownies

This past weekend we were finally able to get the family together for our belated Easter celebration.  It was so fun watching my kiddos + their cousins hunt for eggs.  The Easter bunny hid a few with $1 bills inside and each kid was assigned an egg color.  We searched all night for one last missing purple egg and finally found it just before dessert!  I was excited that we finally got our first family picture of all of us.  Ian is only three months old, so I mean, better late than never.

Speaking of dessert, after baking up our cake balls last weekend, my kiddos couldn’t wait to get back in the kitchen.  We enjoyed the Pillsbury™ Gluten Free Premium Cake Mix from Walmart so much that we decided to give the Gluten Free Premium Chocolate Fudge Brownies a try.  It was perfect for the kids because for this recipe you need to mix by hand instead of using a stand mixer.  The girls thought it was hilarious that you had to “stir 50 times” and enjoyed taking turns.

After the brownies were baked we decided to make a topping for them before digging in.  We agreed on my favorite caramel pecan topping that I use for my Caramelized Pecan Brie.  So rich, buttery, and delicious.  I didn’t really want the kids working with the caramel (sticky + super hot + kids = no thanks) so I tasked them with poking holes in the brownies to let the caramel goodness soak down inside.

The gluten free brownies were delicious- fudgy, moist, and full of chocolate flavor (they come with chocolate chips already added to the mix!).  You honestly couldn’t even tell they were GF.  The caramel topping just sent them over the edge.  Trust me, these are a must for your spring cookouts and summer BBQs!

Caramel Pecan Brownies

Ingredients

  • 1 box of Pillsbury™ Gluten Free Chocolate Fudge Premium Brownie Mix
  • 1/2 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup light corn syrup
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup pecans chopped

Instructions

  • Prepare the brownies as directed on the box.
  • Allow the brownies to fully cool.
  • Use a fork or end of a wooden spoon to poke holes in the brownies.
  • Combine the brown sugar, corn syrup, and butter in a small saucepan over medium high heat.
  • Stir constantly until the butter is completely melted and mixture begins to soft boil.
  • Allow to boil gently without stirring for one minute.
  • Working quickly, remove from heat and immediately stir in salt and baking soda.
  • Fold in the chopped pecans and immediately spread the warm mixture on top of the brownies.
