I haven’t blogged or worked on any recipes in the last month since Ian was born.  Let’s be real… I have barely set foot in the kitchen this past month.  If it weren’t for a few freezer meals I stashed away and my wonderful hubby, the children probably wouldn’t have eaten.  I had grand plans of having things all scheduled and ready to post while I took a little “maternity” time off. Clearly, that did not happen!

The girls spent the night with their grandparents this past weekend and it just so happened that the stars aligned and Ian picked that very same night to sleep TWELVE hours straight.  Twelve hours, friends.  It. Was. Amazing.  So amazing that apparently I felt like I could take over the world the next day and not only cranked out two new recipes for you, but I also created my first video as well!

This Avocado Cilantro-Lime Dip is the perfect pairing for these Bacon-Wrapped Chicken Fries, but would also be delicious with chicken tenders, veggies, or chips!  It’s basically my favorite guacamole recipe made creamy and with some added cilantro.  So yummy and so easy to make, just check out this video:

Avocado Cilantro-Lime Dip

Ingredients

  • 1/2 cup cilantro roughly chopped
  • 1 avocado
  • 2 tbsp lime juice (or juice from one lime)
  • 1/4 tsp garlic powder (or 1 garlic clove)
  • 1/2 tsp Kosher salt

Instructions

  • Add all ingredients in a food processor.
  • Pulse until smooth, scraping sides as necessary.
  • Taste and adjust with more lime juice or salt as needed.

Notes

Store refrigerated in an airtight container for up to three days.
