No Bake Peanut Butter Oatmeal Cookies - this easy four-ingredient recipe makes only one cookie. Smear the top with melted chocolate and a sprinkle of flaky sea salt to satisfy a quick craving!

  • 2 tbsp peanut butter
  • 2 tbsp quick-cooking oats (instant oats)
  • 1 tsp confectioners' sugar
  • 1/4 tsp vanilla extract
  • 1 tbsp semi-sweet chocolate chips
  • flaky sea salt


  • Combine peanut butter, heaping tablespoons of oats, sugar, and vanilla in a small bowl.
  • Transfer to a piece of parchment paper and use fingers to shape mixture into a 2 1/2in wide, 1/2in thick disk.
  • Freeze until firm, about 5-15 minutes.
  • Once cookie is cold and hard, melt the chocolate chips in the microwave at 15 second intervals until smooth.
  • Spread half of the cookie with melted chocolate and top with flaky sea salt.



The chocolate should set up immediately on the cold cookie, but you can pop it back into the freezer for a minute or two if needed.
