- 5 cups cooked sweet potatoes, mashed (about 5-6 medium sweet potatoes)
- 1 cup granulated sugar
- 8 tablespoons unsalted butter, softened
- 1 1/2 teaspoons vanilla extract
- 1/4 cup whole milk
- 1/4 cup heavy cream
- 2 eggs
For the Streusel Topping:
- 1 cup brown sugar, packed
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 4 tablespoons unsalted butter, softened
Preheat oven to 350 degrees.
Add the cooked, mashed sweet potatoes to a large bowl.
Stir in granulated sugar, butter, vanilla, milk and eggs, mix well.
Pour mixture into a 9x13 casserole dish.
For the topping:
Mix brown sugar, flour, pecans, and butter together with a fork until slightly clumpy.
Sprinkle the streusel topping evenly over the sweet potato mixture.
Cook for 30 minutes until topping has browned.
