Beat butter, sugars, and eggs until light and fluffy. Add dry ingredients and blend well.
Place on ungreased baking sheet.
Bake at 375 for 8-10 minutes.
Do not over bake- these will be puffy when fresh out of the oven, allow them to cool and settle on the baking sheet for 2 minutes before transferring to a wire rack to fully cool.
Notes
I wasn't sure how much spice flavor would come through from the pudding mix so I didn't add any additional spices- you can probably add 1/4-1/2 tsp pumpkin pie spice if you want the flavor to be a little more bold.
