Ingredients
3
cups
old fashioned oats
1
large apple
diced (about 1 cup)
½
cup
applesauce
⅓
cup
pure maple syrup
1 ½
cup
almond milk
2
large eggs
1
tsp
apple pie spice
1
tsp
baking powder
1
tsp
vanilla extract
¼
tsp
salt
Instructions
In a large mixing bowl, combine all ingredients except diced apples. Mix until incorporated. (Mixture may seem runny, this is normal.)
In a well-greased cupcake tin, fill each cup fully. All of the mixture should be used.
Once all the cups are filled, sprinkle a generous amount of apples onto the tops of each filled cup.
Slightly press the apples into the mixture. Follow up with coarse sugar if you’d like for a crunch and extra sweetness.
Bake for 20-22 minutes at 350 degrees. Oatmeal cups should be a golden brown color.
Enjoy on their own or with a little maple syrup!
Notes
You can use another milk alternative or cow's milk instead of almond milk.
See notes in the post about substituting apple pie spice.
