Let batter rest a few minutes while the griddle heats up.
Scoop the batter onto a hot griddle (I use an electric griddle set at 325 degrees) and cook each side evenly.

To make your own self-rising flour add 1 cup all-purpose flour with 1 tsp baking powder and 1/4 tsp salt.I like to make bigger pancakes, so I typically get six from this recipe which is perfect for my husband and I. If you want more pancakes, make them smaller. These are dense and won't spread much.
