Squeeze juice from all oranges and measure 3/4 cup of the juice.
In a small mixing bowl, combine the 3/4 cup orange juice, 1 teaspoon of the shredded orange peel, apricot baby food, and egg.
Allow the mixture to come to room temperature before adding the melted coconut oil.
In a large mixing bowl, stir together flour, sugar, baking powder, salt, baking soda, and oatmeal cereal.
Add orange juice mixture to dry ingredients; stir just until moistened.
Pour boiling water over the dried snipped apricots and let stand for five minutes.
Drain well and fold into batter.
Turn batter into a lightly greased 8x4x2 loaf pan.
Bake at 350 degrees for 50-60 minutes, or until wooden pick inserted near center comes out clean.
Allow to cool 10 minutes in pan before removing and cooling thoroughly on a wire rack.
Notes
It's important that the orange juice mixture is at room temperature before adding the coconut oil because if the mixture is too cold it will cause the coconut oil to solidify again.
