When I think of a Texas breakfast I envision a big, hearty, country breakfast. Eggs, hash browns, bacon, pancakes, huevos rancheros, biscuits and gravy… the more the merrier! I always have a hard time deciding between savory or sweet, so I usually end up with a little bit of everything. I may not be feeding a group of hungry cowboys, but sometimes my growing kids sure make it feel that way. I’m always searching for new ways to make easy and delicious meals for them in the morning.
This breakfast hash recipe is what I like to consider a mom life hack. My kids aren’t too crazy about hash browns, but they do love tater tots. Using frozen tater tots makes this recipe super easy without ever peeling or chopping a single potato. And like all great breakfasts- omelets, casseroles, or tacos- it can easily be customized to your preference (or whatever you have on hand!). Toss in some mushrooms, tomatoes, grated cheese, ham, or bacon and top with a protein-packed fried egg.

Wake up with this spicy breakfast hash topped with a fried egg.
- 1/2 lb frozen tater tots
- 1/4 cup red pepper thinly sliced
- 1 jalapeno sliced
- 2 eggs fried
Bake frozen tater tots as directed on the package.
Top cooked tater tots with thin slices of red pepper, jalapeno, and fried egg.
Season with salt and pepper.
This recipe is easily customized to your taste. Add mushrooms, tomatoes, cheese, cooked breakfast meat, etc
