Pecan Pie Bread Pudding

This Pecan Pie Bread Pudding has the signature sweet, sticky, crunchy flavor of pecan pie married into a delicious dessert or breakfast treat.

A couple of months ago I tried a new BBQ place in Dallas, and while their BBQ was amazing, it was their bread pudding that I have been dreaming about since.  I didn’t really even know I liked bread pudding.  I decided it was time to recreate this dish with some Southern flavor.  This Pecan Pie Bread Pudding is perfect for brunch or dessert! 

Pecan Pie is one of my absolute favorite desserts, and one of the first desserts I learned to make on my own. I love the way the signature sweet, sticky, crunchy flavor comes through in this bread pudding. We seriously ate it for dessert after dinner and for breakfast the next day.

What’s Needed for Pecan Pie Bread Pudding?

To make this pecan bread pudding recipe, you’ll need the following ingredients: 

  • Bread 
  • Milk 
  • Eggs
  • Light corn syrup
  • Granulated sugar
  • Vanilla extract
  • Brown sugar
  • Pecan pieces
  • Melted butter

What’s the Best Bread for Bread Pudding? 

I recommend using a loaf of Italian or French bread to make this homemade bread pudding recipe. It should be a day or two old, don’t use fresh bread for this recipe. 

How to Make Pecan Pie Bread Pudding

  1. Cube the bread into bite size pieces and place in a large bowl. 
  2. Pour a mixture of  eggs, milk, vanilla, and white sugar over the bread to coat completely. Let soak for 10 minutes. 
  3. Pour the bread mixture into a greased 9×13-inch pan.
  4. In a medium bowl, combine corn syrup, brown sugar, and melted butter. 
  5. Pour the butter mixture over the bread and top with pecans. 
  6. Bake at 350F for 35-40 minutes.

Can I Prep Bread Pudding in Advance? 

I typically serve this pecan pie bread pudding warm, but it’s also delicious at room temperature. You can likely bake it off in advance, but I imagine you’d want to eat it within 24 hours of making it. 

Tips for the Best Homemade Bread Pudding 

  • If your bread hasn’t had time to dry out a bit on your counter, you can speed up the process by cubing and baking it in a 350F oven for about 15 minutes (just make sure not to actually toast the bread!). 
  • For the richest flavor, use whole milk. Whatever you do, don’t use skim! 
  • Don’t place the pecan bread pudding too high up in the oven, otherwise the pecans might burn.
