With the weather finally starting to cool off I have to fight the urge to dig out all of my boots and chunky sweaters from my closet. It seems like in Texas our enjoyable “Fall” and “Spring” times are so short compared to the humid heat and windy cold seasons. While I’ve been able to hold myself off from transitioning my wardrobe, I wasn’t able to stop myself from putting up all of my fall decorations… three weeks ago.
And I may or may not already be serving up my favorite Fall foods in the kitchen. Hearty chili, chicken pot pie, pumpkin everything… and this delicious soup. The best thing about this soup, besides the flavor, is that it doesn’t take all day to make. I love the smell of a soup simmering on the stove all day as much as the next person, but with our busy lives, sometimes I just really need dinner to be on the table in under 30 minutes!
I found these Tyson® Grilled and Ready® Fully Cooked Refrigerated Grilled Chicken Breast Strips at Walmart and knew they would be perfect for this soup! In the past I’ve just used leftover grilled chicken, but I much prefer the flavor of the already seasoned Tyson® chicken. I used Tyson® Grilled & Ready® Fully Cooked Refrigerated Fajita Chicken Strips (and cut them into bite sized pieces) when I made this soup last, but the Tyson® Grilled & Ready® Fully Cooked Refrigerated Oven Roasted Diced Chicken Breast would work beautifully as well! I like to keep a bag in my freezer to toss onto salads or serve inside tacos- definitely a healthy (98% fat free) and convenient solution for busy weeknights!
Serve this soup with your favorite toppings; we love sharp cheddar, corn chips, and fresh slices of avocado!
Spicy Chicken soup topped with cilantro and cheese.
- 1 cup cooked chicken
- 2 tbsp olive oil
- 1/2 large onion chopped
- 6 cloves garlic minced
- 4 15 oz cans chicken broth
- 1 15 oz can petite diced tomatoes
- 2 jalapenos diced
- 1/4 cup fresh lime juice 3-4 limes
- 1/4 cup cilantro finely chopped
In a large stock pot, heat olive oil over medium heat.
Add chopped onion and saute for 3-4 minutes.
Add jalapeno and garlic, continue cooking until onion is soft and mixture becomes fragrant.
Add chicken broth and tomatoes; bring to a boil.
Reduce heat and simmer for 15-20 minutes.
Just before serving, add lime juice and cilantro.
Top with cheese, corn chips, avocado, sour cream, etc
