I absolutely can’t believe that it is already mid-October and the holidays are right around the corner. I’ve been itching to make my favorite cold weather comfort foods, but unfortunately it is still 90 degrees here in Texas. Fall weather has been teasing us (and slowly killing my front porch mums) for the past few weeks and I wish it would just decide to stay already!
So while I haven’t been making bit batches of Chicken and Dumplings or Creamy Potato Soup, I have been baking up a few of my favorite Christmas cookies. I know, I know, it’s not even Halloween yet and pumpkin.all.the.things hasn’t run its course yet, but it won’t slow me down.
Speaking of slowing me down… we recently had an issue with some water damage in our kitchen and are just now getting around to deciding on repairs. I’m hoping to get it all done in time to host some holiday festivities but we’ve been slow to make decisions. We will be replacing the floors, do we go dark like we currently have or chose something lighter? Should we also go ahead and paint the cabinets while we’re at it?

We opted for all stainless steel in our kitchen and I love how it gives a unified appearance to the room. This Browned Butter Shortbread recipe is actually from my Holiday Cookies eBook but I’ve never shared it here on the blog before now. This shortbread is rich, crispy, buttery and full of flavor. It would be extra decadent dipped in chocolate or crumbled with homemade whipped cream and fresh fruit.
The addition of browned butter makes these shortbread cookies irresistible.
- 3/4 cup butter divided
- 1/4 cup sugar
- 1 1/4 cups flour
- 1/2 tsp salt
Melt 6 tbsp butter over low heat in a medium sauce pan.
Cook the butter about 10 minutes, stirring occasionally, until solids at the bottom of the pan are a rich brown color.
Pour the browned-butter in a small bowl and refrigerate until almost firm- about 30 minutes.
Preheat the oven to 350 degrees.
In the bowl of a stand mixer, beat sugar, cooled browned-butter, and remaining 6 tbsp softened butter at medium speed until fluffy.
Mix flour and salt into creamed butter mixture by hand just until crumbs form.
Gently pat the shortbread crumbs into the bottom of an ungreased 9in round tart pan with removable bottom.
Bake shortbread 40-45 minutes, or until browned around the edge.
Allow to cool in the pan on a wire rack for 10 minutes.
Carefully remove the side of the pan and transfer the shortbread to a cutting board or flat surface.
Cut the shortbread into 12 wedges while still warm to prevent cracking.
Cool the wedges completely on a wire rack.
