Chicken is a staple in our house- especially when I’ve got one kiddo with a beef allergy, so I’m always looking for new ways to use it in recipes. James and I went on a mini date this past week to Cheddar’s Scratch Kitchen. I say “mini date” because the girls were both in school but we still had little man tagging along as third wheel. Now that he is eating more solid foods though, he is happy to tag along out to eat with us- ha! Once we found out it was National Chicken Month, it only seemed fitting to order the Country Chicken Fried Chicken. Hand-battered and pounded out to the size of a dinner plate, it’s James’ go-to any time we go there.
